What’s it all about?

Mexican food almost immediately brings the image of a taco to mind. Mexican food and tacos in general have taken the world by storm; they are fresh, tasty and versatile.

If you want to learn a little bit on the origin of this delicious dish, and some awesome salsa recipes to make your tacos the traditional way, then this class is for you.

What will we cover?

Tacos have existed since the domestication of corn took over and revolutionised the ancient world of what nowadays is Mexico, becoming the most important food item for all ancient cultures in Mexico. They say that there are as many ways to fill a taco, as ways in which people eat them: rolled, folded, deep fried, and stuffed with a filling made of lots of ingredients, or just a smear of lime juice and a pinch of salt. Tacos are here to stay!

We will learn how to prepare four basic but tasty salsa recipes that are authentic and easy to prepare, while listening to interesting facts about tacos, and other ways to accompany a Mexican salsa. We will also learn that just like wines, salsas taste better when matched to specific dishes, tortillas, or ways of preparation.

Who will be teaching?

coral profileCoral is a Mexican archaeologist who has studied the ancient diet of the Maya people in the south of Mexico. She has more than 15 years of experience as an archaeologist and has worked in many parts of Mexico and more recently in Australia. With the information she has gathered from her studies, she has set a small catering company where she cooks traditional dishes using Prehispanic ingredients and methods.
