What’s it all about?

The Canary Islands are located just off the southern coast of Morocco although they are part of Spain. One of the Macaronesian archipelagos, it’s volcanic nature and native vegetation have shaped its peculiar gastronomy. It’s a must as tourist destination due to the amazing beaches, climate and natural attractions as well as the worldwide famous Carnival.

The main features of this cuisine are: freshness, variety, simplicity, richness of its ingredients, eclecticism (due to the many cultural influences) but there is little knowledge of it by the rest of the world. Come to this class and learn more about this intriguing cuisine!

Note: each island has his own cuisine, and even the recipes they share could vary depending on the island.

What will we cover?

First of all, we’ll know a bit more about the archipelago and the gastronomy.

We’ll learn how to prepare the most popular “enyesque” (snack or appetizer), Papas arrugadas (salted potatoes), we’ll make a couple of sauces called “mojo” and try the traditional Gofio. In addition, we’ll learn how to make Tortitas de Carnaval (a dessert similar to pancakes…yummy yummy!!!)

Who will be teaching?

Noemi is from Gran Canaria, one of the Canary Islands (Spain). She enjoys cooking, baking and eating (of course). She would like to share some of the traditional recipes of this archipelago.
